How to Remove Bitterness From Banana Flowers

Banana flowers, also known as banana blossoms, are very attractive flowers whose heavy denseness and delicious flavor cause it to be used more often in cooking than decorating. In between the banana blossom's petals is a very bitter sap that causes the petals to have a very off-putting taste if not prepared correctly. Proper preparation includes removing as much bitter sap as you can in the cleaning process and soaking the rest away in a simple lemon juice mix. After soaking, use the banana flower in soups, stews and other dishes.

Create a mixture of one part fresh lemon juice and one part water in a mixing bowl. Prepare enough liquid to cover all edible petals from the banana flower, which will vary depending on its size.

Remove the first three or so layers of outer petals on the banana flower and discard. Remove all tough purple petals to reveal the softer, light pink petals.

Allow the petals to soak for 30 minutes before rinsing them with cool water. The lemon juice will neutralize the bitterness and prepare the petals to be used in any recipe that you wish.
